Chefs Jon Insetta and Kerri Rogers at the newly opened Bellwether in Downtown Jacksonville (sister to Orsay, Black Sheep and BLK SHP at Intuition) have taken creative liberties with these Southern classics in a manner that is surprisingly delightful and delicious.

What started out as a modest collection of basic eateries and questionable watering holes is now an eclectic mix of trendy bars and restaurants, some of the most popular in town. “There is a parallel between my appreciation of the Italian Garden’s beauty, its layout, symmetry, curves, arches, and lines, and a similarity to how I work with ingredients. I choose ingredients for a dish based on flavor first, and also for their color, texture, shape, and visual interest when plated together.

“I chose this painting becasue I feel that it conveys a strong sense of place. The perspective invites the viewer to wander down the street and explore the city. Eugène Charvot’s style gives the entire piece movement and life. I found it easy to imagine the scene filled with the sounds and smells of this part of the world.

“I saw this piece, and right away it reminded me of fresh spring air. The rocky, grassy mountainscape has a lot of color and breaks in color. There are what appear to be goats at the top of the mountainside, and a beautiful blue sky with just a tiny puff of cloud. I tried to take the colors and peace that are in this painting and translate them to a theme and color scheme on a plate.
